Tête de Moine is French for “monk’s head”. This cheese is cylindrical in shape, with a characteristic bright yellow colour. It is buttery and slightly spicy, tasting best when it is shaved with girolle. It is made from fresh raw rock cow’s milk only. Tête de Moine is the most presentable cheese for decorating a cheese plate, pairing well with grapes, walnuts and Artwinery sparkling wines.
