Recipe from Olga Malyarova, winner of «Favorite dish for sparkling wine» contest


In my childhood I used to arrange evening meals for myself. I would take a large tray, put a mug of hot fragrant cocoa on it, added a pile of appetizing rolls with nuts and raisings, baked by my mother, next to it, and then I would eat them with great pleasure, looking through a huge album with the photos of artists and dreaming of the future.

Many years have passed – I would not like to precise the number. Lots of things have changed. But today is one of those rare (therefore even more precious!) evenings for myself. I am taking old photos out of a secret box and even romantic letters. Instead of sweet rolls – parmesan-thyme cookies, instead of cocoa – white brut Krym by Artemovsk Winery. Who will say afterwards that it is not excellent to be an adult!? ;)

Artemovsk Winery parmesan-thyme cookies for an evening of memories

I am eager to share the recipe with you:


  • - 110 g butter of room temperature
  • - 1/2 teaspoonful salt
  • - 1/4 teaspoonful freshly ground black pepper
  • - 1 glass grated parmesan
  • - 1 glass flour
  • - 1 teaspoonful fresh thyme leaves


Step 1. Knead butter along with salt and pepper. Add parmesan and flour. Thoroughly knead the dough manually.
Step 2. Put the dough into the fridge for 20 minutes. Do not forget to cool a bottle of brut! It is high time you put it into the fridge, or still better – into a wine cooler.
Step 3. Take the dough out and roll it out to achieve the thickness of around 1 cm, spread it with thyme, use the rolling pin to push thyme into the dough and roll out a little more to achieve the thickness of 0,5 cm. Cut the dough into small squares (I usually have over 30 pieces). Cover the baking tray with baking paper, place our cookies on it, spread with the rest of the thyme, salt and pepper.
Step 4. Bake them in the oven for 10 minutes at 180 С to obtain golden color.
Step 5. Let the cookies cool down a bit. Meanwhile take the “box of memories” and open a bottle of sparkling wine. Take a piquant-cheese relish of the cookies that perfectly matches light refreshing brut by Artemovsk Winery. Enjoy your evening!
